The culinary team at LON’s at the Hermosa prides itself on a number of things, among them being culinary creativity and supporting organic produce. Apart from the traditional lunch and dinner menus, a new chef’s tasting menu is offered weekly to showcase these talents, and newly-promoted executive chef James Ducas demonstrates his knowledge of European cooking techniques to every guest.
