The Ritz-Carlton, Dove Mountain is making mouth-watering suggestions via a new prix fixe menu.

 

 

The Ritz-Carlton, Dove Mountain has unveiled a new seasonal Prix Fixe dining menu and Friday evening Wine Experience at CORE Kitchen & Wine Bar. The restaurant’s new Prix Fixe menu takes advantage of the many fresh, regional ingredients available in Arizona this season, while Friday’s weekly Wine Experience is a social and interactive session designed to combine a wine and charcuterie tasting with a lively wine education.

Prix Fixe Dinner Menu

Sunday through Wednesday evenings

The culinary team of CORE has partnered with several local producers to create a $39 three-course dinner menu inspired by the season. While the menu will change based on daily harvests, sample highlights include a starter of Chilled Corn Soup and Chili Popcorn; a main course of Cilantro-Marinated Chicken Breast with Calabacitas, Red Pepper Sauce and Chili Tortilla Strips; and a dessert of Mexican Chocolate Mousse and Mesquite Cookies. Wine pairings will be available as an added option.

CORE Wine Experience

Fridays, 5 to 6 p.m.

A fun, informative tasting experience focusing on specific regions, varietals and wine styles, this event is priced at $15 per person and is offered every Friday. Restaurant Sommelier Michael West personally discusses the selected wines, wine history, geography and food pairings and also fields questions from guests. Three different wines are presented each week, complemented by petit charcuteries and accompanying notes about the wines and wineries discussed. Wine Experience guests will receive a 15% discount on the selected wines tasted that evening as well as a 10% discount on dinner immediately after the event.

The new additions at CORE Kitchen & Wine Bar complement the restaurant’s existing offerings and coincide with the arrival of two key new beverage experts at the resort. Recently promoted to the position of Restaurant Sommelier, Michael West joined The Ritz-Carlton, Dove Mountain in 2009 and held prior beverage management positions at Hacienda Del Sol and Wildflower, both in Tucson. The property’s new senior mixologist/bartender is Joseph Cesar, who served for many years as lead bartender for several major resort properties in Tucson, and who was named by Grand Marnier in 2008 as one of the top 100 bartenders in the United States.
