Beer Margaritas:

 

6oz Corona

3oz Limeade (frozen concentrate)

5oz Patron Tequila (silver)

Ice, lime

  1. Fill Blender halfway with ice. Add Limeade, Corona, and tequila. Blend until frothy.
  2. Pour into salt rimmed glasses and garnish with lime wheels.

Balsamic Glazed Steak w/ Grilled Vegetables    (10 servings):

3lbs. Beef Tenderloin

Zucchini & yellow squash (2 each)

Sweet potato (3)

Asparagus (12 stalks)

Red pepper (2)

Red onion (1)

Portobello mushrooms (2)

Olive oil (1 cup)

Sea salt (1/2 tsp.)

Black pepper (1/2 tsp.)

Red pepper flakes (1/8 tsp.)

1.       Bring meat up to room temperature before grilling. Brush with oil and season with pepper and salt. Cook to desired doneness.

2.       Sliced grilled steak fan onto a large platter and brush with balsamic glaze.

3.       Peel sweet potatoes and slice into ¼ inch thick rounds. Cut zucchini and squash into ¼ inch thick coins. Trim ends off of asparagus. Seed and halve red peppers and halve red onion. Clean and stem mushrooms for grilling

4.       Toss all vegetables w/ remaining oil and grill until al dente.

5.       Sprinkle with sea salt, blk pepper and red pepper flakes.

6.       Place vegetables on separate platter and serve with ranch dressing

*Grilled chicken and shrimp platters may be added for more dining options

Grilled White Peach Shortcake (10 servings):

White peaches (8 cups)

Sugar (6 tbl)

Flour (2 cups)

Baking powder (1 tbl)

Salt (1/2 tsp)

Unsalted butter (cubed, 8tbl)

Egg lightly beaten (1)

Egg white beaten (1)

Half & Half (1/2 cup)

For the Fruit-

1.       Mash 4 cups of peaches with 6 tbl sugar and set aside

2.       Halve remaining peaches and mark on grill. Slice and add to sugared peaches.

3.       Let mixture macerate for 2 hours before serving

For the Shortcake-

1.       Heat oven to 425 degrees and adjust rack to lower middle level in oven.

2.       In food processor pulse flour, 3 tbl of sugar, baking powder and salt to combine. Scatter butter pieces over mixture and process until it resembles coarse meal. Transfer to medium bowl

3.       Mix beaten egg w/ half and half. Pour egg mix into flour mixture. Combine until large clumps form.

4.       Turn mixture onto a floured work surface and lightly knead until it comes together.

5.       Pat dough into a rectangle (about ¾ inch thick) Be careful not to overwork dough. Cut out silver dollar rounds with glass and place on baking sheet. Brush with egg whites and sugar.

6.       Bake until Golden brown, 10-12 minutes

7.       Cut biscuit in half, fill with peach mix top with fresh whipped cream and remaining peaches
