Chef Matt Carter showcases the restaurant’s signature balance of tradition and innovation with standout starters like the Burrata D.O.P. with Prosciutto, elevated with pomegranate, cherry mostarda, pistachio, and served alongside Noble Bread and EVOO—an elegant play on richness and acidity.
Seasonal pasta dishes also take center stage, such as the Pici with miso-grilled trumpet mushrooms and a dandelion pine nut salsa verde, and the Capelletti, a squash-filled pasta finished with fermented garlic honey and zucchini sott’olio. The Sorpresine offers a bold blend, pairing veal alla vodka with yellow tomato, nduja, caciocavallo, and a balsamic crumble for a dish rich in savory-sweet complexity.
Fat Ox’s refreshed summer cocktail menu is designed to be as bright and refreshing as a desert sunset. Highlights include Good Fortune, made with vodka, hibiscus aperitivo, peach, lemon, orange blossom honey, and moscato, and Pipino, a cooling mix of gin, lime, cucumber, smoked jalapeño, and jasmine.
For tropical flair, the White Lotus blends rum, banana falernum, lime, pineapple, and coconut, while the Melone Verde offers a crisp mix of tequila, honeydew melon, génépy, lemongrass, and mint.
