From Kaufman Hospitality, the team behind neighborhood spots The Living Room and Elvira’s, Tomu San is the group’s most ambitious concept yet. Steeped in tradition but wholly modern in execution, it’s a place where bamboo and bonsai set the tone for an atmosphere of calm precision and sensory indulgence.
“This concept has lived in my soul for years,” Founder Tom Kaufman said. “Tomu San isn’t simply about sushi, it’s about creating a world. Every moment here should feel crafted, elevated, and impossible to forget.”
At the heart is the vision of Executive Chef Christopher George, who brings a deep respect for traditional sushi craft and a modern eye for detail.
“Sushi is the intersection of discipline and discovery,” George said. “At Tomu San, we don’t serve food, we stage a narrative, one piece at a time.”
Whether guests are stopping in for a sake flight during happy hour or reserving a seat at the omakase counter, Tomu San promises an experience where no detail is overlooked. During happy hour, bold fire-kissed rolls and elegant cocktails take center stage, offering a daily indulgence at a surprisingly approachable price.
The menu will span a wide range of classic and contemporary offerings, from nigiri and sashimi to unexpected modern creations that honor traditional technique while exploring new forms. Complementing the food is an extensive beverage program featuring rare Japanese whiskies, hand-selected sake, innovative cocktails, and thoughtfully crafted zero-proof pairings.
