It tops toast and tacos—so why not whip avocado into a cooling cocktail? This summer, shake up this refreshing margarita from resident mixologist, Philippe Zaigue, of Los Cabos’ One&Only Palmilla.
2 oz. Tequila Blanco
1 oz. Fresh pineapple juice
¾ oz. Fresh lemon juice
½ oz. Agave syrup
¼ Fresh avocado
Add avocado and lemon juice in the base of the cocktail shaker, and muddle. Add remaining ingredients with ice, and shake vigorously for 10 seconds. Double strain in a coupe glass, and garnish with a grapefruit twist, crushed black pepper and a basil stem.
