The team at Hi Noon Hospitality invites guests to embark on a culinary voyage through the Mediterranean with the grand opening of Pinyon, a new concept debuting October 29 in Old Town Scottsdale. Located along the park on Scottsdale Mall, Pinyon is more than a restaurant – it’s a gathering place inspired by centuries-old coastal traditions and the universal joy of sharing a meal.
Born from a journey through the Mediterranean Basin, Pinyon reflects the tastes, textures, and traditions discovered across the coasts of Spain and Italy, the markets of Morocco and Turkey, and beyond.
“After immersing ourselves in the region’s food culture, the idea for Pinyon came to life,” said Adam Strecker, CEO and founder of Hi Noon Hospitality. “We found a kind of magic in those moments, and we’ve woven that feeling into every detail of this restaurant.”
The product of a multi-million-dollar transformation, Pinyon was brought to life by the creative partnership of Aline Architecture, Social Design Studio, and MCI Builders. Together, they’ve reimagined the space into a design-forward venue that blends Old World charm with contemporary craft.
At the core of Pinyon’s kitchen is the Josper Grill: a charcoal oven handcrafted in Barcelona and beloved by chefs for its ability to infuse food with unmatched depth and smokiness. This live-fire technique defines much of the menu, from whole roasted turbot and prime flat iron to signature charcoal-grilled skewers like Sea of Cortez shrimp and B&R Reserve tenderloin.
The menu celebrates the bold, fresh flavors of all 22 Mediterranean countries, offering everything from crudos and handmade pastas to seasonal salads and warm house-made pita. One of Pinyon’s signature offerings is its rotating Hummusiya menu: a spread of hummus and Mediterranean dips meant for sharing. Served with warm, in-house baked pita, selections include baba ganoush, fava bean dip, grilled artichoke, pistachio labneh, and a charcoal-grilled beef tenderloin hummus spiced with Aleppo pepper.
With the sea as a central theme, Pinyon’s seafood dishes highlight refined simplicity. Expect elegant preparations such as yellowtail crudo, salmon carpaccio, stuffed calamari, linguine and clams, and dressed Dungeness crab. A rotating oyster selection, served chilled with house-made mignonette, rounds out the coastal offerings.
The bar program is an experience in itself. Wines from Corsica, Sardinia, Sicily, and the Eastern Mediterranean – alongside craft cocktails and effervescent spritzes – mirror the food menu. From aperitifs and amaros to rare liqueurs and globally sourced wines, every drink is designed to complement the cuisine.
Pinyon’s interiors evoke warmth, sophistication, and the kind of timeless comfort found in seaside European towns. Warm wood tones, red leather booths, hand-cut checkerboard marble floors, and exposed ceiling beams – there’s also a glowing downstairs bar that features artisanal brass fixtures. The dining room flows onto a European-style patio framed by Chilean mesquite and olive trees.
The upstairs lounge and bar area offers park views, anchored by a custom zinc bar top, alabaster lighting, and sculptural brass shelving. Textured stone walls reminiscent of European streetscapes add a tactile, immersive element to the space.
Art is central to the restaurant’s ambiance, with works from local and national artists, including Scottsdale-based figurative painter Mike Carson and abstract artist Rami Sharkey of New Orleans. Each piece was selected to deepen the sense of place, connection, and emotional resonance.
