Early next year, Saguaro Nights Entertainment Group will unveil Pablo’s, a bold and immersive cocktail destination in downtown Phoenix that will blend historic charm with high-concept design and drinks.
Set on the northwest corner of McKinley Street and First Avenue, right next to the Saiya apartments, Pablo’s reimagines a 9,000-square-foot Spanish-style building originally built in 1952. What was once a medical office will soon become an atmospheric hideaway with layered experiences waiting behind every door.
Husband-and-wife duo Cary Prewitt and Melissa Levick, the visionaries behind Saguaro Nights, are making their Arizona debut with this concept – one designed to delight the senses.
“Melissa and I moved to Phoenix and quickly fell in love with the culture, the people and the incredible energy,” Prewitt said. “Bringing our first concept to Arizona felt like the natural next step, and downtown was the perfect place to begin. With Pablo’s, we want to add to the city’s momentum by creating something fun, unexpected and a little magic – the kind of destination people never want to leave and always want to come back to.”
Saguaro Nights has partnered with Barter & Shake Creative Hospitality, the award-winning group behind cocktail havens like Century Grand and Undertow. Under the guidance of hospitality expert Mat Snapp, Pablo’s cocktail program is being developed as a collection of inventive, boundary-pushing drinks that meet every mood of the night.
“Great nightlife is about harmony – when the music, the design and the drinks all move together,” Snapp said. “Our cocktail program is built with that in mind: drinks that are full of surprises, and ready to match every mood of the night. Pablo’s interior design is in the hands of Crater, the hospitality arm of Mexico-based Arkham Projects, renowned for spaces that push creative boundaries. LGE Design Build is overseeing the transformation of the historic structure, ensuring its soul is preserved while reimagining it for a new era.
Guests will navigate through multiple spaces, each with its own tone and tempo: three unique bars, Pablo’s Living Room, the Den, the Billiards Room, a central courtyard, a high-energy front patio, and Night Tiger – a nightclub designed for dancing long after midnight. Each space is a destination of its own, encouraging movement, connection, and spontaneous discovery.
“We wanted Pablo’s to feel authentic to its historic space while celebrating the artistry of Mexican design,” said Levick. “From the architecture to the furnishings, every detail was chosen to create an environment where people feel transported the moment they walk through the door.”
