This fall, Chef/Partner Cory Oppold invites guests to step into the season with a new culinary journey at COURSE, where comfort meets high art and nostalgic flavors are reimagined with creativity, elegance, and just the right amount of playfulness.
Launching October 10, the new five-course and eight-course prix fixe menus are a tribute to the richness of autumn. Each dish draws on the season’s most evocative ingredients. Think root vegetables, wild mushrooms, rich broths, and hearty meats reworked through Oppold’s signature lens of modern refinement.
The Eight-Course Tasting | Fridays & Saturdays | $175 per person
The eight-course experience is a luxurious exploration of autumn’s bounty. The menu opens with a reimagined Danish, where kaluga caviar sits atop wild mushroom and cream cheese, accented by gamtae seaweed – a nod to childhood breakfasts turned haute cuisine.
Midway through, guests encounter a reinvented take on Tom Kha, where Oppold layers chicken mousseline, confit thigh, maitake mushrooms, and butternut squash in a velvety coconut broth. At once soulful and elevated, the dish captures the warmth and complexity of the season.
The experience culminates in a steakhouse-inspired composition that blends ribeye with matsutake mushrooms, cheddar, brown ale, and a pretzel crumble—a dish that feels both indulgent and nostalgic, with COURSE’s signature artistry on full display.
The Five-Course Tasting | Tuesdays through Thursdays | $135 per person
On weeknights, the five-course menu offers a more intimate taste of fall. It begins with smoked salmon paired with Granny Smith apple, celery root, and kohlrabi – an aromatic introduction that evokes the crispness of early autumn.
Guests then choose between two second courses: the carrot gnudi with pistachio, persimmon, and brown butter, or the refined version of Tom Kha. The main course delivers a balanced pairing of venison loin and house-made sausage, served with Brussels sprouts, bacon, and layered pear – a dish that celebrates the heartiness of the season with elegance and depth.
Both menus conclude with spiced budino and a series of mignardises. For guests looking to elevate their experience further, expert wine pairings are available for each menu. Choose from sommelier-selected pairings or curated reserve options and learn more at courserestaurantaz.com.
