JING Brings High-Energy Dining and Global Flavor to Scottsdale

Scottsdale’s dining scene has never lacked ambition, but the arrival of JING signals something bigger than a new restaurant. It’s an experience, immersive, energetic, and designed to evolve as the evening unfolds. Now open at the corner of Scottsdale Road and Shea, JING marks its first Arizona location and fourth nationwide, joining sister restaurants in Aspen, Denver and Las Vegas after an $11 million transformation.

JING (meaning “energy”) lives up to its name. The concept centers on sushi, steaks and seafood, layered with subtle Asian influence and executed with polished technique. The vision comes from founder Charlie Huang and Vice President Alex Kane of JING Hospitality Management Group, brought to life in close partnership with Corporate Executive Chef Thomas Griese. Leading JING’s culinary direction since 2019, Griese trained under culinary heavyweights Thomas Keller, André Rochat and Michael Mina.

“We set out to capture the high-energy dining experience that JING is so well known for, and that’s why JING Scottsdale is as much about the atmosphere as it is the food,” Griese said. “Guests can start with carefully crafted cocktails and shareable plates, move into elevated dinner courses that showcase globally inspired flavors, and linger as the evening unfolds. Dining at JING Scottsdale is an experience where the menu, the energy, and the moment come together to create connection.”

The menu moves between indulgence and finesse, offering hand-crafted sushi rolls, nigiri and sashimi, raw bar selections, dumplings, shareable plates and the dramatic Wagyu hot rock presentation. Guests will also find grains and noodles, chilled and fire-roasted shellfish platters, and Josper-grilled meats – each dish striking a balance between premium ingredients and an approachable sensibility.

Signature offerings reflect both creativity and comfort. The Famous Peking Duck arrives with delicate flour wraps, fresh leeks and cucumber, and traditional hoisin sauce. The Tuna Pizza layers ponzu aïoli, yuzu soy, crispy capers and truffle oil over tuna for a dish that’s visually striking. The Alaskan Snow Crab roll combines Alaskan snow crab and kanikama wrapped in soy paper, finished with warm ponzu butter.

Anchoring the kitchen is a Josper charcoal oven and grill imported from Spain, used by only a handful of restaurants in the Valley and the first JING location to feature one. Fueled by a distinctive blend of Binchotan charcoal alongside mesquite, pecan and fresh oak woods, the Josper burns at extreme heat, imparting depth and intensity to everything it touches.

The Longbone Tomahawk emerges with a dramatic char and undeniable presence, while Colorado Lamb is prepared to highlight its natural richness and succulence. The Josper Roasted Shellfish Platter – featuring Alaskan King Crab, Skull Island tiger prawns, Boston middle neck clams, Prince Edward Island mussels, half a Maine lobster and Kusshi oysters – delivers both spectacle and flavor.

An extensive wine list features globally recognized labels, while a sake program highlights premium Junmai Daiginjo selections designed to complement sushi, seafood and grilled meats. Cocktails lean into Asian-inspired ingredients with modern mixology techniques. Seasonal offerings rotate throughout the year, and a curated selection of zero-proof options ensures every guest has something in hand.

Interior designer Heather Hassan of Chapin House collaborated with Emiko Design, CW Architecture and Harris Construction to completely reimagine the space into an ultra-chic destination. Drawing on principles of chi and feng shui, the design contrasts fire and water elements while embracing a look that feels distinctly Scottsdale. Rich green tones and upscale finishes nod to the surrounding desert landscape.

Plush booths and varied ceiling heights accented in gold create layers of visual intrigue. Expansive patios complete the experience, offering a sleek fire pit, lounge seating and dining tables.

JING begins the day with happy hour from 3 to 6 p.m., featuring sushi rolls, shareables and cocktails. DJs begin at 7 p.m. on weekdays and 8 p.m. on Fridays and Saturdays. Located at 10605 N.
