Hope you all had a Happy Thanksgiving. And now that Turkey Day is over, it’s time for Turkey Day leftovers… which frankly can be just as delish as the big meal itself, especially if you whip up one of these healthy recipes…
If you don’t have leftover turkey, you didn’t make a big enough bird. Leftover turkey sandwiches are as American as…. well, Thanksgiving itself. And this easy-to-make sandwich is one of my faves.

Leftover: Canned Pumpkin
No doubt you have an extra can of pumpkin sitting around. Instead of storing it in the pantry until next year, try this healthy twist that combines protein-packed beans and good-for-you greens. Plus pumpkin is loaded with Vitamin A to help boost your immunity.

Leftover: Fresh Sage
Whenever I buy fresh herbs for a recipe, I’m always at a loss what to do with what I don’t use. They usually wilt until I eventually (and guiltily) chuck ‘em. Leftover: Green Beans
I love green beans… and since I’m 95% vegetarian, it’s usually my favorite dish on the Thanksgiving table (especially if they’re combined with toasted almonds a la chef Jim). But they’re not exactly mashed potatoes-popular, which is why you need a great way to use up the leftovers.
