On Tuesday, Oct. 3, at 6:30 p.m., there will be a unique pop-dining experience created by El Panzon y Frida and Twisted Infusion Farms, a urban farm in Glendale.
As part of a two-year photojournalism series by Edible Phoenix Magazine entitled “Arizona on a Plate,” El Panzon y Frida’s young Executive Chef, Paulina Martinez, paired up with Heather Szymura from Twisted Infusion Farms, a unique urban farm located in Glendale. The two met at Twisted Infusions for a personal tour by Szymura, exploring her 40-foot, 63° container farm filled with vibrant hydroponic produce thriving under red and green LED lights.
From this visit grew an instant friendship and a burst of inspiration for the pop-dinner menu, a follow up experience to the interview recently featured in the Fall issue of Edible Phoenix. The three-course dinner will highlight twisted infusions fresh and locally grown herbs and peppers, combined with Chef Martinez’ hearty New York strip for the main entrée.
The menu includes first course H Bomb Hummus Peanut Hummus | Herb Salad| Chichen Itza Oil | Cayenne Pepper | Plantain Chips Paired with Boedecker Chardonnay | 2013 Willamette Valley; second course lettuce beef friends Roasted Bambi Lettuce | New York Strip | IPA Braised Onions | Sunchoke Chips | Gremolata Paired with Prado Rey Crianza | 2013 Spain; third course inked and awesome Blackberry Parfait | Apple Sponge | Honeycomb | Chocolate | Elephant’s Food | Yogurt Sauce Paired with Paolo e Noemia d’Amico Orvieto | 2015 Italy
Reservations to the dinner are being accepted now with limited seating available. Cost is $60++ includes wine pairings.
