Sparrow, the newest concept from Sky Restaurant Concepts, has announced its grand opening date: Saturday, September 20. The restaurant will open its doors at The Trailhead in Peoria, bringing with it an eclectic menu and a welcoming atmosphere designed for community and connection.
The menu celebrates a diverse fusion of cultures, flavors, and culinary influences that define modern American cuisine. Sparrow aims to deliver an experience that is innovative and rooted in authenticity. The team behind the project has poured their creativity and vision into every detail of the concept.
“We’re thrilled to finally open our doors and share what we’ve been passionately creating for the Valley to enjoy,” said Emily Ganem, co-owner and creative director of Sky Restaurant Concepts. “This is a place for the community to gather, savor exceptional flavors, and experience the energy and hospitality that Peoria deserves. Sparrow is eager to make every visit memorable.”
Guests can look forward to five distinctive salads, fresh oysters served raw or grilled with miso butter, and a range of entrees that showcase the kitchen’s technique-driven approach. Highlights include short rib ragu tagliatelle with wild mushrooms, a seafood hot pot for two, and a 10-ounce charbroiled prime grade filet mignon. Seasonal fish selections will also be available.
“Opening this concept is the culmination of years of devotion and ingenuity,” Executive Chef Schuyler Estes said. “My vision has always been to craft dishes that celebrate bold flavors, intentional techniques and the stories behind each ingredient. We know we have put together something truly unique.”
Enhancing the experience is a cocktail program led by Libby Lingua and Mitch Lyons, the creative forces behind Phoenix’s Highball Cocktail Bar. Libby Estes, operations manager at Sparrow, plays a central role in ensuring that the experience is meaningful for both guests and staff.
The 4,300-square-foot restaurant features an open-concept interior, a full bar with inviting lounge seating, and a covered patio. The design is the result of a collaboration between Ganem Companies, ALINE Architecture, and Social Design Studio, all working together to create a space that’s stylish and accessible.
Located within The Trailhead, a 40-acre mixed-use development in the Happy Valley Corridor, Sparrow is positioned as a flagship destination in a hub for locals and visitors.
