Someburros is continuing its expansion with the opening of a new restaurant in North Peoria, bringing the Arizona-born brand to one of the region’s fastest-growing communities. The family-owned Mexican restaurant will celebrate the grand opening on June 30, 2026, at 25700 N. Lake Pleasant Parkway.
Situated within Lake Pleasant Towne Center at the intersection of Happy Valley Road and Lake Pleasant Parkway, the restaurant offers a convenient dining option for area residents, commuters, and visitors heading to nearby destinations such as Lake Pleasant Regional Park and Scorpion Bay Marina.
Founded in 1986, Someburros has become a favorite by serving Sonoran-style Mexican food inspired by generations of family recipes. The new location continues that tradition, offering guests the same made-to-order dishes and welcoming atmosphere that have defined the brand for nearly four decades.
“For 40 years, our family has been passionate about creating a place where guests can enjoy fresh, authentic food and be a part of our community,” Owner and President Tim Vasquez said. “We’re excited to continue growing in the West Valley and bring Someburros to an active and growing part of Arizona.”
The restaurant’s menu is rooted in the recipes of family matriarch Nana Isabel Vasquez, whose home-cooked Sonoran-style dishes inspired the concept behind Someburros.
Among the restaurant’s most popular offerings are its signature burros, made with fresh tortillas and fillings such as carne asada, machaca beef, green chile beef, pollo asado, and classic bean and cheese. Guests can enjoy tacos, enchiladas, and combination plates served with Nana Isabel’s famous rice and refried beans.
One of the restaurant’s specialties is the Pollo Fundido, a customer favorite featuring marinated chicken breast wrapped in a flour tortilla, lightly fried, and topped with jalapeño cream cheese, cheddar cheese, and green onions. Someburros also serves breakfast all day, including burros, tacos, and traditional breakfast plates. Drive-thru breakfast service begins daily at 7 a.m., while the dining room opens at 9 a.m.
The new location will also introduce guests to the restaurant’s Mini Burros, a snack-sized option designed for on-the-go dining. Available in a variety of flavors including bean and cheese, green chile beef, shredded chicken, rice and cheese, ground beef with beans and sour cream, and egg, cheese and potato, the smaller portions are ideal for quick meals, gatherings, or summer outings.
To celebrate the opening, Someburros will reward early visitors with a special giveaway. Beginning at 9 a.m. on June 30, the first 50 guests in line at the Lake Pleasant location will receive a complimentary Someburros insulated tumbler.
