New Menu & Sous Chef Debut at Proof, Four Seasons Resort Scottsdale at Troon North

Proof, an American Canteen, at Four Seasons Resort Scottsdale at Troon North has debuted a new menu with expanded lunch and dinner offerings, which now include the culinary creations of new Sous Chef Edgar Flores.

Chef Flores comes to Proof most recently from Omni Scottsdale Resort & Spa at Montelucia, where he worked at Prado restaurant and in the banquet department. As the second oldest of five children, Flores’s culinary passion grew from helping his mother in the kitchen and cooking for his siblings. While he has called Phoenix home for the majority of his life, Flores hopes to pay homage to his Mexican heritage by incorporating elements of his culture into the menu and continuing to elevate and refine the classic American roadside concept.

“Chef Flores brings extensive experience in the local marketplace to his new role at Proof, and a creative, elevated approach to the comfort food concept,” says Proof Executive Chef Chuck Kazmer. “Guests and local visitors will still find their favorite Proof Pretzel Knots and signature items on the menu, along with new features highlighting local produce, seasonal ingredients and freshly smoked meats.”

New lunch offerings now include a selection of entrée salads that use locally-sourced vegetables and seasonal ingredients plus house-made salad dressings, including a new orange and vanilla vinaigrette and smoked jalapeño Caesar dressing. The extended dinner menu features highlights such as Bourbon-Glazed BBQ Ribs, Smoked Bone-In Texas Short Ribs and Achiote-Rubbed Smoked Half Chicken, all paired classically with a buttermilk drop biscuit, slaw and house pickles. 

To complement the new lunch and dinner menu, Proof now features new cocktail offerings, like the Proof Smoked Barrel Aged Old Fashioned, as well as new dessert items, such as the the Bourbon and Chocolate experience, pictured above, which features a decadent 10-layer chocolate cake with a smoking chocolate Proof cigar and a shot of bourbon, all revealed under a cloud of smoke tableside. Executive Pastry Chef Yudith Bustos and her team also reimagined and elevated dessert classics, such as the S’mores and Proof ice-cream sundaes.
