Hyatt Regency Scottsdale Partners With Celebrity Chef Richard Blais on 6 New Restaurants

Hyatt Regency Scottsdale Resort & Spa at Gainey Ranch has partnered with Celebrity Chef Richard Blais to debut six brand new restaurant concepts on the property as a part of the resort’s $110 million renovation. 

Located at the base of the McDowell Mountains, the resort is currently in the process of a multi-phase renovation and is rebranding to the first Grand Hyatt hotel in Arizona, which will bring guests reimagined amenities and services to enjoy on the property, including six new dining experiences helmed by television star and James Beard-nominated Chef Blais. 

Blais is a successful chef, restaurateur, James Beard-nominated cookbook author and television personality and currently co-stars alongside Gordon Ramsay on FOX’s hit cooking competition, “Next Level Chef”. Blais is also widely recognized as the first winner of Bravo’s “Top Chef All-Stars”.

The resort’s new restaurants are expected to debut this fall and will include a signature Italian concept by Chef Blais, a fusion of Japanese and Spanish tapas, a Southwest-style grill, an extravagant lobby bar and two new poolside dining experiences.

The first of the six new dining experiences to debut at the resort is Chef Blais’ signature concept: a personal love letter to Italian American cuisine with a focus on hand-made pastas and charcoal-grilled steaks, seafood and chops. The outlet will feature sophisticated indoor seating connected to the resort’s Desert Garden outdoor entertainment space and will include an elegant wine bar and lounge serving premier Italian wines.

The second concept will showcase a vibrant and playful menu that brings together the best of Japanese sushi and Spanish tapas infused with the unique flavors and ingredients of the Southwest. The focal point will be a spacious sushi and tapas bar offering delicious made-to-order specialties.

Chef Blais will also oversee the development of a Southwest-style grill highlighting the best produce, meats and seafood from the regional area. The three-meal restaurant will be open daily for breakfast, lunch and dinner and will be connected to the resort’s renovated lobby bar,  which will reflect the extravagant style of a classic and grand hotel lounge.

To complete the exciting new selection of on-property restaurants, Chef Blais will debut two reimagined poolside dining experiences. The first, H2Oasis, is currently open and available for guests and features a menu boasting delicious island-inspired tacos highlighting global flavors from the South Pacific, Polynesia, Hawaii and the Caribbean, along with many exciting frozen cocktail selections. The second is a family poolside restaurant that will feature popular American dishes, such as gourmet burgers, fresh seasoned fries, crispy chicken tenders and more.
