Trendsetter to Know: Sacha Levine

Name: Sacha Levine

Instagram

Age: 35

Title: Executive Chef at Century Grand

Married/Single: living with a partner.

Kids: not for me. My chubby, geriatric dogs keep me busy enough!

City you live in: Phoenix

A typical day in my life includes…

cooking! My life is so centered around food. Whether it be cooking food for my friends and family, planning our next dining destination, talking shop with fellow industry comrades, working in a kitchen, reading cook books, or indulging in my unhealthy addiction to grocery shopping, every day I am food focused. Maybe I should seek help.

I was born…

in Chicago, but was primarily raised in Bullhead City. It most definitely shaped who I am today although I was happy to escape the small-town blues.

My favorite thing about Arizona…

is what a diverse state we are. I am a very cynical person and used to hate Arizona. Through age and exploration, I have learned what an absolutely dynamic state we are in terms of climate, agriculture, growth, and heritage.

I’m listening to…

female fronted surf punk. Music is a huge driving factor in my life. Tacocat, Wimps, and Locavores It’s Embarrassing are all rattling my core.

My family…

is a really complicated matter.

If I could have dinner with anyone, it would be…

dream dinner parties are fun in concept but at the end of the day I enjoy being amongst friends the most.

One thing I cannot live without…

is work. Progression. Learning.

When I was younger, I wanted to be…

maybe an actress. I was a huge drama nerd and still am today. The path less beaten at the time was cooking. Especially with my plus size bod.

I’m inspired by…

culture. Things I’ve never eaten before and places I’ve never seen.

The one person who motivates me is…

MOTHERF*****G CHARLEEN BADMAN. She is relentless. A wild woman who makes me feel like I should always be doing more.

If I could change anything in the world, it would be…

ABOLISH ICE or AMAZON.

The perfect day would be…

in the pacific northwest on the beach with goods from the farmers market.

My first job was…

the back drive at McDonald’s when I was 15. I think I made maybe five dollars an hour. At the time there wasn’t a lot of opportunity in Bullhead. Mopping the Playplace every night was a very humbling experience.

My favorite escape

is a quiet San Diego beach. Waves = decompression.

My life…

is a wild ride. When you have an affection for the arts, it can pull you in a lot of different directions. Although my home base will always be food, I love running all the other stops.

I’m currently working on…

OPENING CENTURY GRAND! This project is incredibly exciting for myself and the team in the kitchen because it allows us to do the local seasonal thing we always do on a really fun elevated level.  Also I have a water color passion project you can follow on Instagram- thedoodlemanfiles.

Always…

is a very reliable brand of female hygiene products.

Never…

be an a**hole.

“Life itself is the proper binge.” – Julia Child

Biggest Dream…

everyone eats good food!

My Pet Peeve(s)…

this question would be better suited for a cook working with me.

More about Sacha and Century Grand…

Sacha Levine is an award winning chef with almost two decades of experience under her apron. Her experience and expertise are precisely why the leadership at Barter & Shake tapped her to be the Executive Chef at their latest experiential restaurant concept, Century Grand.

“She’s the best chef in Phoenix, hands down,” explains Jason Asher, the co-owner/founder of Barter & Shake. “We’re thrilled to have such an inspired chef on our team!”

Sacha is best known for transforming local, seasonal produce and proteins into vibrant reflections of the farmers and artisans from whom she sources. She’s honed her craft by working at such celebrated kitchens as Rancho Pinot, FnB, Quiessence, and Atlas Bistro. All this culminated in her becoming the co-chef and owner of Ocotillo, which was named “Best New Restaurant” by Phoenix New Times and “Hottest Restaurant in Phoenix” by Thrillist in 2016. Now, she’s finally ready to shed the “co” from her title and
lead the culinary charge at the most unique restaurant experience in the state.

Barter & Shake develops and operates award winning craft cocktail concepts, including UnderTow and Counter Intuitive. Century Grand (scheduled to open later this year) is their most ambitious project to date, incorporating multiple bars, innovative cuisine and a bottle shop, all in the fun, immersive environment for which Barter & Shake is known.
