Easy Recipes for Tasty and Adorable Holiday Cakes

Christmas has nearly arrived!  In spirit of the holiday, featured below are AZ Foothill’s picks of five tasty holiday cake recipes. Whether you’re baking with your family or as a gift for your boyfriend, these cupcake and cake creations are simple to bake and the perfect dose of holiday cheer!

1.  Red Velvet Cupcakes

The Ingredients:

  • 3/4 cup butter, softened
  • 1 1/2 cups sugar
  • 3 large eggs
  • 1 (1-oz.) bottle red liquid food coloring
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 3 tablespoons unsweetened cocoa
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 tablespoon white vinegar
  • 1 teaspoon baking soda

2.  Gift Box Cake

The Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup shortening
  • 2 cups sugar
  • 2/3 cup water
  • 2/3 cup milk
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons vanilla extract
  • 1 teaspoon almond extract
  • 6 egg whites
  • Powdered Sugar Frosting
  • 3 (4.5-oz.) packages chewy fruit rolls by the foot
  • 1/3 cup white sparkling sugar or edible glitter
  • 8 gingerbread men cookies (3 to 3 1/2 inches tall)

3.  Peppermint Hot-Chocolate Cake

  • 1/2 cup boiling water
  • 1 (4-oz.) milk chocolate baking bar, chopped
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup buttermilk
  • Fudge Filling
  • Peppermint-Cream Frosting

4.  Peppermint Frosting

Ingredients:

  • 1 cup butter, softened
  • 8 ounces cream cheese, softened
  • 1/4 teaspoon table salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 32 ounces powdered sugar
  • 2 to 3 tablespoon’s of milk
  • 12 hard peppermint candies

  • 2 cups all-purpose flour

  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs, separated
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • Coconut-Pecan Frosting
  • Garnish: chocolate-dipped toasted pecan halves
