Recipes: Vegan Dinners

While the rest of the world is grilling up hot dogs and burgers this summer, take a meat break and try out these three dreamy vegan recipes courtesy of Vege USA.

Vegan Ham Hoagie
Yield: 1 serving
10 slices of Vegetarian Plus® Vegan Ham Roll
1 vegan hoagie loaf
Vegan mayonnaise, to taste
Spicy brown mustard, to taste
3 tomato slices, ¼ inch thick
4 red onion slices, ¼ inch thick
3 tablespoons avocado, finely chopped
1 ounce arugula leaves
Horizontally slice vegan hoagie loaf in half and construct Vegan Ham Hoagie by first spreading the vegan mayonnaise and mustard on top and bottom halves of hoagie to taste. Layer bottom half with tomato, onions, Vegetarian Plus Vegan Ham slices, avocado, and arugula leaves. Top with other hoagie half.

Vegan Greek Tuna Salad
Yield: 8 servings
1 (10.5 oz.) box Vegetarian Plus® Vegan Tuna Roll
7 tablespoons vegan mayonnaise
1 tablespoon garlic powder
¼ cup marinated artichoke hearts, coarsely chopped
¼ cup red onion, diced into ¼ inch cuts
¼ cup tomatoes, cores and diced into¼ inch cuts
¼ cup kalamata pitted olives, coarsely chopped
2 tablespoons parsley, finely chopped
Lemon juice to taste
Salt & white pepper to taste
8 green lettuce leaves
In a bowl, incorporate the first eight ingredients together. Add lemon juice, salt and pepper to your preference. Chill for 30 minutes. Place green lettuce leaves in center of plate. Place Vegan Greek Tuna into the green lettuce leaves. Serve as a hand wrap, salad, or with saltine crackers.

Gourmet Vegan Citrus Sparerib Tacos
Yield: 2 servings
1 (10.5 oz) box Vegetarian Plus® Vegan Citrus Sparerib Cutlets
2 tablespoons canola oil
8 4½-inch corn tortillas
½ tomato, cut into ¼ inch slices
8 cilantro sprigs
½ red onions, cut into ¼ inch slices
1 fresh mango, diced into ¼ inch cubes
Thaw Vegetarian Plus Vegan Citrus Sparerib Cutlets as instructed on box. In a sauté pan, add 2 tablespoons of oil over low/medium heat and thawed Vegan Citrus Sparerib Cutlets. Cook until heated through, approximately 30 seconds. If sauce thickens too much, add 1 tablespoon of water at a time until desired consistency. Place approximately 3 Vegan Citrus Sparerib Cutlets in the center of 1 corn tortilla and layer with tomato, cilantro, onion, and chopped mango. Fold your Gourmet Vegan Citrus Sparerib Taco. Option: To add a spicier flavor, incorporate hot sauce to taste.
