Recipes: Healthy Fall Snacks

Now that October is here, so, too, is the season of over-indulging. Instead of sneaking more candy corn, fill up on goof-for-you ingredients like chia seeds, flax seed and coconut oil that still product sweet, tasting treats. Before embarking on a Halloween-induced sugar binge, try one of these delish, breakfast-worthy recipes from Carrington Farms.

Berry-Chia Smoothie Bowl
1/3 cup frozen blueberries
1/2 cup frozen strawberries
1 cup kefir or probiotic yogurt drink of choice
1 Tbsp + 1/4 tsp Carrington Farms chia seeds
1/2 banana, sliced
1 dried fig, sliced
1 strawberry, sliced (or fruit of choice)
Blend frozen berries, one tablespoon of chia seeds and kefir to a thick consistency, for about 20 seconds. Pour into a small bowl and layer fruit and remaining chia seeds on top.

Healthy Monkey Bites
1 banana
2 tbsp peanut butter or your favorite nut butter
1 tbsp Carrington Farms coconut oil or 1 pack of Carrington Farms Coconut Oil Paks
1 tbsp unsweetened 100% cacao powder, such as Hershey’s
1 tsp baking stevia
Cut the banana into small rounds, making sure you have an even number because you will be making little “sandwiches” out of them.Top half of the banana slices with peanut butter and sandwich the other half on top.Place in freezer to chill for about 10 minutes. Meanwhile prepare the chocolate shell. To make the chocolate shell: Melt Carrington Farms coconut oil. Mix in cacao powder and stevia, and make sure to stir until the chocolate mixture is well combined. Dip chilled peanut butter sandwiches in the chocolate. Place back in freezer for a few moments to harden the chocolate shell.
