Saltmine Studio Oasis, one of the most acclaimed recording studios in the world, is stepping out of the sound booth and into the kitchen with the launch of Diamond Don’s Legendary Steaks & Spirits. Now open in Downtown Mesa’s Arts District, Diamond Don’s serves up a menu of premium comfort food, paired with handcrafted drinks and the unmistakable vibe that has long defined the Saltmine name.
Located at 42 & 48 South Macdonald Street, adjacent to the Saltmine Oasis Venue, Diamond Don’s is the brainchild of Founder Don Salter and co-developed with his son, Saltmine’s chief producer Velvet Cash. The new concept brings together Don’s decades of hospitality, love for food, and commitment to artistry.
The menu is rooted in the dishes Don Salter has personally cooked for visiting artists during studio sessions over the years; spontaneous, heartfelt meals made late at night for the likes of Lil Wayne, Alicia Keys, DMX, The Jonas Brothers, and countless others who have recorded at Saltmine. That same energy of late-night inspiration and generosity now lives on in Diamond Don’s, where smash burgers, Philly cheesesteaks, Wagyu steaks, scratch-made sides, and artisan pizzas take center stage.
The restaurant pays tribute to Bitter Creek Grill, the award-winning 1970s Arizona restaurant helmed by Don and his brother John Salter. That eatery – renowned for its quality and charm – serves as the foundation for Diamond Don’s reimagined experience: one that blends historic roots with modern luxury, all while staying true to the spirit of hospitality that made the original so memorable.
From world-class music to mouthwatering meals, Diamond Don’s promises an experience unlike any other. Whether you’re a chart-topping artist or someone who appreciates elevated comfort food, Diamond Don’s is poised to be your new favorite haunt. For more information, visit thesaltmine.com.
