Winter Superfoods (+ Contest Reminder)

Just because it’s winter doesn’t mean you should be taking a break from eating your veggies. Quite the contrary. Cold and flu season is just the time to load up on antioxidant-rich veggies —and there’s plenty of produce in season. Maya’s Farm, an organic sustainable farm at the base of South Mountain, is turning out superfoods galore in green, red and more. Here’s a run down, plus creative ways to whip up the good-for-you grub.

Oh, and before I forget, December 19th (as in tomorrow) is the last day to enter the contest to win a winter CSA from Maya’s Farm ($300 value). The winner will be selected at random on Thursday December 20, 2012. To claim the prize, you’ll need to fill out and submit a membership form to Maya’s Farm by December 28, 2012.

Beets
Why it’s a superfood: Loaded with betalains, phytochemicals that give beets their ruby red hue and help your heart and liver. They’re also high in folate, manganese and potassium, plus the greens add beta-carotene, vitamin C and calcium.

Broccoli
Why it’s a superfood: High in vitamin C, calcium and fill-you-up fiber, broccoli is a cruciferous veggie that may also protect against cancer.

Micro Arugula
Why it’s a superfood: Microgreens are small but mighty. Studies show they have higher levels of vitamins and antioxidants than mature leaves. That means a super dose of vitamin A, C and calcium, as well as potassium, magnesium, fiber and folate.

Toscano Kale
Why it’s a superfood: One cup provides more than 100 percent of the daily value of vitamins K and A, and 88 percent of the DV for vitamin C, plus it’s been linked to cancer prevention.
