Spring is in the air, and along with it come some fresh and green superfoods for March. From rosy red radishes to the richest greens, get a spring in your step with these March superfoods.
Tich in potassium, fiber and vitamins A and C, add collard greens to a traditional salad or simmer along with a meat dish and spices for a tasty entree.
Noted to play a role in cancer prevention, sprinkles choped scallions over any dish to add an extra oomph of flavor that’s not quiet as strong as an onion.
They may seem like an odd food, but turnips are rich in potassium, fiber, antioxidants and vitamin C. Keep the greens, which are loaded with their own health benefits, like vitamin K, iron and calcium. Toss into a salad or with other veggies.
The USDA rates artichokes as one of the top 10 most antioxidant-rich foods. If that’s not convincing enough, artichokes are also packed with fiber and vitamins C and K. Steam and dip in a mix of olive oil and vinegar for a healthful appetizer.
