Recipes: From Cooking Channel’s “Extra Virgin”

The holiday entertaining is upon us–and we’re sure you’re looking for a few fresh new recipes to liven up your usual dinner-party repertoire. Luckily, House Foods Tofu, premium tofu purveyor, has partnered with celebrity chefs Debi Mazar and Gabriele Corcos (of Cooking Channel show “Extra Virgin”) to create healthy and beautiful dishes to serve up this holiday season.
Vegan_Orange_Zest_Cake

2 ½ cups flour
1 cup coconut palm sugar (or brown sugar)
½ package (7 oz) House Foods Premium or Organic Tofu Firm
½ cup water
½ cup vegetable oil
Juice and zest of one blood orange (or orange)
Juice of one lemon
1 ½ tablespoon baking soda
2 tablespoons powdered sugar for garnishing
1 tablespoon butter for greasing pan
Preheat oven to 375 degrees. In a mixer, blend together tofu, water, oil and the citrus juice. Pour the mix into a large bowl. In a different bowl, mix together flour, sugar, baking soda, salt and baking powder. Mix all ingredients together evenly. Slowly pour the dry mix into the liquid mix, whipping constantly to avoid the formation of lumps. Once all ingredients are mixed, the batter should have a moderately thick consistency. Grease a 9” x 11” rectangular pan. Using a rubber spatula, spread the dough evenly in the pan. Bake for 35-40 minutes then let cool at least 30 minutes before removing from pan. Garnish with sifted powdered sugar and serve sliced in rectangles, like a traditional Schiacciata. Note: To make recipe vegan, use butter alternative.
SMTofu_Stuffed_Bell_Pepper
Tofu-Stuffed Bell Pepper

1 package (14 oz) House Foods Premium or Organic Tofu Extra Firm, drained and pressed
1 cup brown rice, cooked
1 (15 oz) can tomato sauce
4 bell peppers, seeded
1/3 cups onions
Cheese for sprinkling
Vegetable oil
Salt and pepper to taste
Heat vegetable oil on stove and sauté onions until lightly browned. Cut tofu into ½” cubes and add to pan. Heat tofu until browned and add salt and pepper to taste. Combine with rice. Stuff bell peppers with rice and tofu mixture (about 3 tablespoons each). Pour tomato sauce over peppers and bake at 375 degrees for 40 minutes (or until pepper is cooked to your preference). Sprinkle cheese and bake an additional 5 minutes or until cheese is melted. Note: To make recipe Vegan, use cheese alternative. Serves 4
