Recipes: St. Patty’s Day

Don’t bust your gut drinking green beer. Celebrate St. Patrick’s Day with one of these more tasteful–yet festive–eats and drinks.

Green Chile Macaroni and Cheese

1 lb. of elbow macaroni raw
¾ cup of small diced onions
¾ cup of poblano peppers
¾ cup of red peppers
1 oz. cooking oil
1 ¼ cup of heavy cream
½ tablespoon of kosher salt
½ tablespoon of black pepper
3 cups of shredded pepper jack cheese
1 ¼ cup of poblano puree (poblano peppers pureed in blender to make 1 ¼ cups liquid)
Cook macaroni in plenty of salted water until its tender and drain. Sauté onions and peppers in oil for 4-5 minutes. Season with salt and pepper. Add cream and reduce at five minutes. Add poblano puree and reduce for 4-5 minutes. Add macaroni and turn off the heat. Fold in the cheese and check seasoning.

1 oz. Patron XO Café (chilled)
½ oz. Irish Cream
Liquor (chilled)
Pour chilled Patron XO Café into shot glass, then float Irish cream on top.

Celtic Drops

1 ½ oz Three Olives Naked, Orange, Cherry or Grape
¼ oz. Monin Agave Nectar
½ oz. sour mix
3 squeezes of lemon
Coat rim with sugar and garnish with a lemon wedge. Build in shaker tin with ice and shake. Pour into glass as a shot.

Irish Coffee Cocktail

1 oz. of Jamesons Irish Whiskey
1/2 oz. of Patron Xo Coffee Liqueur
1 oz. of Chilled Italian Roast Coffee
Dollop of hand-whipped cream
Add all ingredients to a shaker with ice and mix well for 10-12 seconds. Strain into a martini glass and top with a dollop of hand-whipped cream and three coffee beans.
