Phoenix nightlife gets a culinary lift as Carry On, the immersive retro-airline dining experience from Pretty Decent Concepts, returns to its roots with a limited-run pop-up titled “Farewell to Mexico City.”
Running December 26 through January 11, the event celebrates Carry On’s original San Francisco → Mexico City route for the first time since its debut, this time in collaboration with Taquería El Califa de León, the Michelin-starred taco institution whose five-decade legacy has shaped Mexico City’s culinary identity.

Guests can enjoy a custom welcome cocktail, Carry On’s signature peanuts and shortbread cookies, and three tacos crafted in the storied style that has earned El Califa de León global acclaim. The collaboration arrives as El Califa de León prepares to open its first permanent U.S. location in New York City in 2026.

“We have cooked on the streets of Mexico City for years, and every taco we serve carries the discipline, tradition, and pride that define our story,” CEO Jose Andres Hernandez said. “As we prepare for New York, it matters to us that we share this moment with Carry On and give Phoenix a taste of home.”

Carry On itself continues to expand its global narrative, with its next immersive “flight” departing from New York to Tokyo in mid-January, linking the taquería’s future home base to the broader culinary journey. Immediately after Christmas, Carry On transforms its cabin into the original San Francisco → Mexico City route that launched the experience, offering Phoenix a final homage to the city’s taco culture.
