1. Chilli Rubbed Tilapia

Ingredients:

  • 2 pounds asparagus, tough ends trimmed, cut into 1-inch pieces
  • 2 tablespoons chili powder
  • 1/2 teaspoon garlic, powder
  • 1/2 teaspoon salt, divided
  • 1 pound tilapia, Pacific sole or other firm white fish fillets
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons lemon juice

2.  Speedy Mediterranean Chicken

  • 1 tablespoon olive or vegetable oil
  • 2 teaspoons curry powder
  • 1 jar (16 oz) Old El Paso® Thick ‘n Chunky salsa
  • ½ cup sliced green olives
  • ¼ cup golden raisins
  • ¼ cup honey
  • 1 deli rotisserie chicken (2 to 2 1/2 lb), cut into 6 to 8 pieces,
  • Remove the skin from the chicken if wanted.
