Sky Restaurant Concepts, the hospitality group behind local favorites like Squid Ink Sushi and Highball Cocktail Bar, has announced the upcoming opening of its newest concept, Sparrow. Set to debut in early fall at the Trailhead in Peoria, Sparrow will showcase an American eclectic menu that embraces a diverse range of cultural influences, flavors, and styles, capturing the spirit of modern dining.
The new 4,300-square-foot restaurant will feature an open-concept layout, designed to offer guests a warm, welcoming atmosphere. With a full bar, lounge seating, and a spacious covered patio, Sparrow aims to become a neighborhood hub where design and flavor come together to create meaningful experiences.
The project is a collaboration between Ganem Companies, ALINE Architecture, and Social Design Studio, each contributing to a space intentionally built for community connection.
“Sparrow is designed as a place where people feel a sense of belonging the moment they walk in,” said Emily Ganem, Co-Owner of Sky Restaurant Concepts. “The vision behind the menu is to create something American in the most authentic sense: eclectic, inclusive, and inspired by the world around us.”
Sky Restaurant Concepts, founded in 2010, has long been rooted in delivering elevated hospitality across Arizona. Executive Chef Schuyler Estes will lead the kitchen, crafting bold yet approachable dishes.
Operations Manager Libby Estes will oversee the guest experience and team development, while the cocktail program – curated by Libby Lingua and Mitch Lyons of Highball Cocktail Bar – will offer an imaginative beverage lineup to complement the food.
“Peoria needs a restaurant that speaks to the community with the energy, quality, service, environment, and ambience it deserves,” said Parker Ganem, Founder of Sky Restaurant Concepts. “We knew this was a mission worth pursuing, and we’re bringing it with pride. Peoria asked and we’ll deliver.”
