If you’re looking for a reason to slip into something a little more elevated after work, Maple & Ash has you covered. The acclaimed steakhouse – known for its wood-fired seafood, premium cuts and effortlessly stylish vibe – has expanded its popular Tower Hour, and the result is a happy hour that feels anything but ordinary.
Available daily from 4 to 6 p.m. in the bar and lounge, Tower Hour draws inspiration from the restaurant’s signature fire-roasted seafood tower. The experience centers around a $40 dish loaded with Manila clams, oysters, prawns and scallops. For those who prefer to keep things simple, $3 oysters are served raw or fire-roasted on the half shell, making it easy to mix and match.

A lineup of indulgent bites rounds out the experience, including Whipped Ricotta, Sizzling Wagyu Beef, Oyster Rockefeller Dip and Lobster Frites. Each dish pairs with the restaurant’s curated beverage selection, from crisp bubbles and global wines to inventive cocktails like the Tito’s Martini, The Sour Spritz and the Local Old Fashioned. And then there’s the insider move: the Maple Burger.
This off-menu item is only available during Tower Hour and only until it sells out. Priced at $22, the burger layers cheddar cheese, pickles, onions and dijonnaise, served alongside fries. It’s a low-key addition that’s quickly becoming a must-try for regulars who know to ask.

Since opening along the Scottsdale Waterfront in 2019, Maple & Ash has brought a fresh perspective to the traditional steakhouse, blending a modern aesthetic with warm, attentive service. Originally founded in Chicago’s Gold Coast neighborhood, the concept continues to evolve while staying rooted in its signature wood-fired approach. Learn more at mapleandash.com.
