Scottsdale Restaurant Debuts New Menu

When the triple-digit temperatures make themselves known, diners crave cooling cuisine that won’t weigh them down. One local restaurant is answering those summertime cravings as Cask 63 American Eatery and Wine Bar in Scottsdale’s Gainey Village SHOPS has unveiled a new menu of lighter fare. The new menu also features seasonal ingredients including summer squash, pears, tomatoes, apples, lemons and more. Here’s a look at what diners can expect to taste during their next Cask 63 outing:

• Red Crab Salad with Roasted Corn, Red Onion, Cucumber, Tomato, Avocado and Black Pepper Ranch Dressing
• Roasted Chicken Salad served with Mango, Tomato, Carrots, Mint, Cilantro, Cashews and Honey Sesame Vinaigrette
• Salad Nicoise with Mesclun, Fingerling Potatoes, French Beans, Egg, Capers, Mixed Olives and Heirloom Cherry Tomatoes
• Warm Angus Corned Beef Sandwich served on Thick Cut Rye, with Whole Grain Mustard Aioli, Housemade Sauerkraut, Swiss Cheese and Sweet Potato Fries
• Grilled Summer Squash Panini with Caramelized Onion, Roasted Red Peppers, Arugula, Pesto, Tomatoes and Sweet Potato Fries
