SALTA to Debut Argentine Live-Fire Cooking in Phoenix This Fall

Phoenix-based Pomo Restaurant Group, the hospitality group behind Pomo Pizzeria Napoletana, Rosso Italian and Luna Gelateria, is expanding its footprint with SALTA, a high-energy Argentine live-fire steakhouse slated to open in Downtown Phoenix this fall.

Named after the northwestern Argentine province and its capital, SALTA will center its dining on the spirit of Argentine asado: steaks, seafood, vegetables and shareable dishes prepared over wood and charcoal.

The restaurant will showcase a custom Argentine-style wood-fired parrilla and oven, built in Spain and tailored specifically for the space. Designed to provide precise control over heat, smoke and char, the grill will anchor the kitchen and dining room, giving guests a direct connection to the cooking process and making the fire itself part of the experience.

“With Pomo, we built trust by honoring the traditions behind the food. Salta carries that same respect into a completely new experience. The fire is visible, the flavors are honest, and the room is designed to bring people together. We want guests to feel the warmth of Argentine hospitality from the moment they arrive,” said Stefano Fabbri, founder and chairman of Pomo Restaurant Group.

Led by Executive Chef Dylan Harper in collaboration with Chef Carlos Alberto Lopez, SALTA’s menu will draw from the traditions of asado while catering to a modern audience. Prime cuts and other live-fire dishes will remain central to the experience, with the grill providing a common thread throughout the menu. Guests can look forward to handmade empanadas, wood-fired provoleta, milanesa, seafood, pasta, salads and shareable plates.

The restaurant will feature a bar with 25+ seats connecting the dining room and patio. A dedicated cocktail program and fire-grilled small plates will complement the menu’s smoky, rich and bright flavors. SALTA is slated to open in late fall 2026 in Downtown Phoenix. For more, visit pomogroup.com.
