
Get ready to fall in love! I tasted these delish gems by Kaleidoscope at the lululemon Fashion Square grand opening and fell head over heels in love. To-die-for! I luved them so much, as soon as I got home I emailed Alexandra from Kaleidoscope for the recipe – and she delivered big time! They’re uber healthy, super tasty and ridiculously simple to make! Here’s the recipe plus a breakdown of ingredient benefits…
Lemon Drop Truffles
(makes 25-30)
Ingredients:
2 cups coconut dates
zest and juice of 2 organic lemons
1 tsp crushed pink Himalayan salt
3 cups shredded coconut (unsweetened), divided
3/4 cup ground Brazil nuts (process in dry Vitamix container or food processor)
5 tbsp coconut oil
1 1/2 tsp vanilla extract
1/2 cup lucuma powder
2 tbsp maca powder
Directions:
1. Place dates, lemon zest/juice and salt in large bowl. Can start mushing with a fork, then use hands. Add 1 cup of coconut, lucuma, maca and ground Brazil nuts. Drizzle coconut oil and vanilla over. Mix well.

2. Place remaining 1 cup of coconut in a large bowl. Pinch off little balls of date mixture to desired orb size, roll between your hands into balls, then roll in coconut to coat well. Make sure the balls are nice and round, and evenly coated in coconut.

3. Place in storage container and let them firm up in the freezer for 30 mins. Transport to fridge and voila! Will stay great in fridge for several weeks.
