Peoria’s dining scene just got a little more exciting. Sparrow, the American eclectic restaurant from Sky Restaurant Concepts that opened last fall, has officially launched its weekend brunch service, bringing a fresh lineup of elevated comfort dishes and cocktails to the West Valley.

Available Saturdays and Sundays from 9 a.m. to 3 p.m., the new brunch reflects the same culinary style that has already made Sparrow a destination for lunch and dinner. Known for blending global influences with modern American cuisine, the restaurant’s latest menu introduces creative takes on brunch classics while leaning into bold flavors and playful presentation.


“We’re absolutely thrilled to launch a fresh new menu and expand our weekend hours for brunch at the restaurant,” said Emily Ganem, co-owner and creative director of Sky Restaurant Concepts. “Guests are invited to experience delectable breakfast selections as well as an assortment of specialty cocktails.”
The brunch menu features 12 dishes ranging from sweet indulgences to savory comfort staples. Among the offerings is the Grapefruit Brûlée, a caramelized ruby red grapefruit dish that adds a refreshing twist. The Sparrow Avocado Toast elevates the brunch staple with beefsteak tomato, pistachios, and microgreens atop toasted Noble bread, while the Lox Nest layers smoked salmon, poached eggs, dill cream cheese, fried capers, and pickled red onion over a crispy potato nest.


For heartier appetites, dishes like the Bees & Gees — featuring heritage sausage gravy, scratch-made tea biscuits, and eggs any style — and the Short Rib Benny topped with jalapeño hollandaise deliver comfort food with a chef-driven edge. Guests with a sweet tooth can opt for the Mascarpone-Stuffed French Toast, served with wild berries and maple syrup.
“It has been a rewarding experience developing a menu that incorporates classic elements while introducing innovative twists and new offerings,” Executive Chef Schuyler Estes said. “I aim to provide dishes that highlight bold and unique flavors, and I’m confident that we’ve done that through our brunch menu.”


Guests can sip on creative brunch drinks, including a prickly pear Aperol spritz, blood orange beer-rita, strawberry guava black pepper paloma, blushing watermelon vodka cocktail, and mimosa service by the bottle. Sparrow’s signature Bloody Mary anchors the beverage lineup for traditionalists.
