3 Quick Healthy Snacks for the Girl on the Go

We are all so busy these days that anything that can be made ahead of time is a total win in our book! We’d like to introduce you to three of our favorite healthy, sweet, delicious and easy to make snack bite recipes. Our current favs are Lemon Meringue, White Chocolate Carrot Cake and Coconut Cookie Dough.

These may sound beyond indulgent but they are all loaded with goodness and healthy ingredients to keep your energy levels up! Another total win right? Plus, they literally only take minutes to make as there is zero baking involved. Just a little preparation at the grocery store and a food processor and you are good to go!

The main ingredient in all three of these featured recipes is oats which are one of the most nutrient dense grains you can eat. Oats are loaded with antioxidants; fiber, protein and lots of vitamins making these bites the perfect afternoon pick me up! Our recipes contain dates or pure maple syrup for a hint of natural sweetness, the perfect way to avoid refined sugar.

We suggest making up a batch of these awesome bites and storing them in your fridge for up to a week. They probably won’t last that long after you try a bite but you can always make more. We promise you’ll love them!

White Chocolate Carrot Cake Balls

What You’ll Need:

  • 1 C rolled oats
  • 6 medjool dates, pitted,
  • ½ C shredded carrots, packed
  • ¼ C pecans (preferrably toasted)
  • 1 Tbsp coconut oil
  • 1 Tbsp pure maple syrup
  • ¼ tsp cinnamon
  • ½ tsp vanilla
  • ¼ tsp kosher salt
  • optional – ½ C white chocolate chips

Coconut Cookie Dough Bites

What You’ll Need…

  • 1 C oats
  • 10 medoolji dates pitted
  • ⅓ C coconut manna – (can purchase at Sprouts, Whole Foods or Amazon)
  • 1 tsp vanilla
  • 1 Tbsp maple syrup
  • ½ tsp kosher salt
  • if desired 2 Tbsp mini chocolate chips, chia seeds, raisins, white chocolate chips, etc

Lemon Merengue Pie Balls

What You’ll Need…

  • 1 C rolled oats
  • 6 medjooli dates, pitted (if dry soak in hot water for 10 minutes)
  • juice of ½ large lemon
  • zest of 1 lemon
  • 1 Tbsp coconut oil
  • 1 Tbsp pure maple syrup
  • kosher salt to taste
