10 Delightfully Delicious Ideas for Extra Girl Scout Cookies

During Girl Scout cookie season, it is almost impossible to say no to purchasing a box, or maybe even a dozen boxes, of these tempting cookies.  Saying no to a sweet Girl Scout is out of the question.  So, what are you expected to do with all the extra boxes?

Since you’ll already have boxes on boxes of these tasty treats, below are ten fun ideas of recipes to make from your extra cookies.  These ten recipes are simple, easy and delicious!

1.  Samoa Cupcakes

Ingredients:

Cupcakes:

  • One batch Vanilla Vanilla Cupcake batter from Martha Stewart
  • 2 boxes Samoas Cookies (crumbled)
  • One batch Slightly Coconut Frosting

Slightly Coconut Frosting

  • 1 can coconut milk
  • 4 ounces cream cheese (softened)
  • 4 tablespoon butter, softened
  • 1/2 teaspoon vanilla extract
  • 1 and a 1/2 cup of powdered sugar

2. Tagalog Peanut Butter Parfaits

Ingredients:

For peanut butter mousse:

  • 4 ounces cream cheese, softened
  • 1/2 cup creamy peanut butter
  • 1/2  cup plus one tablespoon confectioners’ sugar
  • 1/4 teaspoon pure vanilla extract
  • 2 tablespoons heavy cream

  • 10 Tagalong® Cookies, chopped
  • fudge sauce (store bought or homemade)
  • A half cup heavy cream plus 1 tablespoon confectioners’ sugar, whipped

3.  Do-Si-Do Oatmeal Sandwich Cookies

Ingredients:

  • 3/4 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup quick-cooking oats

  • 1/2 cup creamy peanut butter
  • 1 cup powdered sugar, sifted
  • 3 tablespoons heavy cream

  • 9 ounces of Thin Mints (I used the whole 10 oz package of Keeblers Grasshopper Cookies)
  • 4 ounces of cream cheese at room temperature
  • 12 ounces green candy melts, divided (I used Wilton brand)
  • 2/3 cup white chocolate chips, divided

5.  Inside-Out Trefoil Smores

  • 1 box Trefoil Girl Scout Cookies
  • 1/2 c semi-sweet chocolate chips

6. White Chocolate Thin Mint Popcorn

Ingredients:
  • 1 cup of popcorn kernels
  • 3 cubes melting white chocolate (or 1/2 cup of melting chips)
  • 6 thin mint cookies, crushed
  • 1/2 cup white chocolate chips

  • 1 box Tagalong Girl Scout Cookies, Chilled or Frozen
  • 2 Tbsp Butter, melted and cooled
  • 1 1/2 cup Heavy Whipping Cream
  • One 8 ounce brick Cream Cheese, softened or room temperature
  • 1/2 cup Smooth Peanut Butter
  • 1/3 cup Sugar

8. Do-Si-Dos Pie

Ingredients: 

For the Crust:

  • 2 boxes Do-Si-Dos Girl Scout Cookies (3 sleeves for crust, 1 for top)
  • 4 ounces rolled oats, toasted in the oven and cooled
  • 4 tablespoons unsalted butter, melted and cooled
  • Pinch of salt

  • 9 ounces creamy peanut butter
  • 4 ounces sweetened condensed milk
  • Pinch of salt
  • 10 ounces heavy cream, whipped to soft peaks and chilled

Brownies:
  • ½ cup butter, room temperature
  • ⅓ cup dry lemonade powder
  • ¼ cup granulated sugar
  • 1 egg, plus 2 yolks
  • 1 teaspoon vanilla
  • ¾ cup flour, plus 2 Tbsp
  • ¼ teaspoon baking powder
Glaze:
  • 1 cup powdered sugar
  • 2-3 tablespoon prepared lemonade OR juice from one lemon, approx 2-3 Tbsp
  • 1 tsp lemon zest

  • ¼ Cup Unsweetened Cocoa Powder
  • 1 Cups All Purpose Flour
  • ¾ Teaspoons Baking Soda
  • ¼ Teaspoon Baking Powder
  • ½ Teaspoon Salt
  • 1 Cups Granulated Sugar
  • 2½ Ounces Dark Chocolate, finely chopped
  • ½ Cup Buttermilk
  • ½ Cup Strong Brewed Hot Coffee
