Chef Gio Osso is manning\u00a0the restaurant at the Bespoke Inn, transforming the 25-seat eatery in to what he describes as \u201ca quiet, cozy secret in Downtown Scottsdale.\u201d<br \/>\nThe menu at Virt\u00f9, the Machiavellian term for achieving excellence, &#8220;is definitely rooted in the Mediterranean, but I think of it as wandering Mediterranean,\u201d Osso says. \u201cYou might see a few Asian or South American touches here and there.\u201d The grand opening is\u00a0slated for June 13.<br \/>\nThe fine dining menu (though Osso says it won&#8217;t be &#8220;snoozy&#8221; fine dining) will be packed with mmm-inducing housemade pastas, superb seafood, new Mediterranean creations and rustic favorites. The menu is expected to change weekly.<br \/>\nThe new restaurant\u00a0will feature 30 boutique wines with nearly 15 of them poured by the glass. Virt\u00f9 will seat 25 guests inside and an additional 26 on the picturesque courtyard patio.<br \/>\nPrior to his work at the airport,\u00a0Osso gained attention for his amazing work at the
