This is not the time to experiment with complicated food items.\u00a0Remember that you are going to be serving\u00a0eight to 10 different items.<br \/>\n-Follow this simple formula:<br \/>\n<em>A Sweet Breakfast Dish<\/em><br \/>\n<em>An Egg Dish<\/em><br \/>\n<em>Fresh Fruit<\/em><br \/>\n<em>An Antipasti Platter (salami, cheeses, olives, etc.)<\/em><br \/>\n<em>or<\/em><br \/>\n<em>A Smoked Salmon Platter (capers, red onion, cream cheese, etc.)<\/em><br \/>\n<em>Breakfast Breads (bagels, muffins, Danish, etc.)<\/em><br \/>\n<em>A Salad<\/em><br \/>\n<em>An Entr\u00e9e Dish with a Simple Side<\/em><br \/>\n<em>Desserts<\/em><br \/>\n-Use all equipment and appliances available. Don\u2019t create a menu where everything needs to be cooked on the stove top.\u00a0Utilize the grill, the oven, the stovetop\u2026whatever you have.<br \/>\n-Don\u2019t be afraid to ask for help. Ask someone to bring the fruit platter, or dessert.\u00a0 It will save a lot of time.<br \/>\n-Make sure that you have chafing dishes to keep hot food hot.<br \/>\n-Use the wedding china. This is the perfect opportunity to break out the fancy china that is probably still in its original box.\u00a0You\u2019ll be surprised at how it can dress up your brunch.<br \/>\n-Don\u2019t forget the cocktails. Mimosas, bellinis and Bloody Marys are a must, but also have a signature cocktail to offer. Make sure that you have some interesting garnishes for the Bloody Marys.<br \/>\n-Decorate with fresh flowers and bowls of Easter candy.<br \/>\nSample Menu:<br \/>\n<em>Tequila Lime-Watermelon Cooler (recipe below), Mimosas, Belinis, Bloody Marys<\/em><br \/>\n<em>Crespelle (Italian crepes) with Lemon-Basil Ricotta and Strawberry Marmalata<\/em><br \/>\n<em>Fritatta with Prosciutto and Asparagus<\/em><br \/>\n<em>Seasonal Fruit Platter<\/em><br \/>\n<em>Smoked Salmon Platter, Capers, Red Onion, Cream Cheese, Chopped Hard Boiled Egg<\/em><br \/>\n<em>Bagels, Muffins, Scones<\/em><br \/>\n<em>Cucumber and Tomato Panzanella<\/em><br \/>\n<em>Grilled Pork Tenderloin with Roasted Potatoes, Arugula and Lemon<\/em><br \/>\n<em>Chocolate Truffle Easter Eggs, Easter Cookies, Strawberry Rhubard Upside Down Cake<\/em><br \/>\nTequila Lime-Watermelon Cooler<br \/>\n3 seedless watermelon, peeled and cut into 1 1\/2&#8243; dice<br \/>\n6 lime zest (removed with a micro plane grater) and lime juice<br \/>\n1\/2 C agave nectar syrup, amber color, not light (natural sweetner made from agave)<br \/>\n1 Liter tequila (silver or reposado&#8211;not anejo)<br \/>\nMix all ingredients together in a large, tall vessel and let sit overnight in refrigerator. Next day: Fill rocks glass with ice and some of the cubed watermelon. Ladle accumulated tequila lime-watermelon liquid into glass. Top with a floater of club soda if you wish.
