Giving diners the chance to dine a bit lighter this holiday season, Fleming&#8217;s Steakhouse and Wine Bar is offering a new small plates menu.<br \/>\nFleming&#8217;s new small plates menu is intended to be enjoyed with a glass of wine, shared with friends, as a starting course to a meal or even as an alternative to a large entr\u00e9e. Sliced Filet Mignon on shiitake risotto, chili oil, drizzled with porcini butter; Jumbo Shrimp Scampi Skewers with chimichurri dipping sauce and avocado citrus salad; New Zealand Petite Lamb Chops with pistachio-mint pesto, \u201cF-17\u201d sauce, and polenta fries; Ahi Tuna Skewers with wasabi aioli, sweet tomato vinaigrette, and homemade wonton chips; New Bedford Scallops with meyer lemon-honey glaze, baby carrots, green beans, and asparagus; Filet Mignon Skewers with gorgonzola-bacon fondue, mozzarella and sweet tomato salad; and Fleming\u2019s Lobster Tempura with soy-ginger dipping sauce, arugula, jicama and apple salad. The lobster tempura is a favorite of Fleming&#8217;s executive chef Russell Skall. \u201cWe took a guest favorite that was an indulgent, high-calorie appetizer, and recreated it. You still have the succulent lobster and dipping sauce only now it\u2019s paired with a salad and has only half the calories.\u201d<br \/>\nFleming\u2019s small plates range in price from $15.50 \u2013 $22.95. The items on the small plates menu (as well as much of the Fleming&#8217;s menu) can be modified to be gluten free upon request. The new small plates menu is available at all four local Fleming\u2019s location: Scottsdale&#8217;s DC Ranch, Chandler, Scottsdale and Peoria. <a href=\"http:\/\/www.flemingssteakhouse.com\/\"
