A signature steakhouse tradition is making a major comeback in Glendale next month as Arrowhead Grill<\/a> reintroduces its popular tableside Prime Rib Trolley – this time with a much wider presence on the menu.<\/p>\n\n\n\n

Chef-owner Charles Schwerd is expanding one of the restaurant\u2019s most requested dining experiences, bringing back the slow-carved prime rib service five nights a week beginning in April. The move marks a return to form for the award-winning steakhouse, which has been serving guests in Glendale since 2008 and is known for its classic, high-end atmosphere and premium cuts.<\/p>\n\n\n\n

The Prime Rib Trolley itself has become something of a Valley legend among regulars. Once offered nightly, the experience was scaled back to Sundays, prompting consistent guest demand for its return. Now, with renewed momentum and upgraded kitchen capabilities, the restaurant is restoring it to its dining program.<\/p>\n\n\n\n

A key part of the revival is a newly installed industrial smoker, which allows Arrowhead Grill to slow-roast its Black Angus prime rib for more than 20 hours. Once fully prepared, the massive roast is rolled directly through the dining room on a trolley and carved tableside, continuing a tradition that blends presentation with old-school steakhouse theater.<\/p>\n\n\n\n

As a third-generation restaurateur, Chef Charles Schwerd brings decades of inherited expertise to the kitchen. His family\u2019s background in cattle farming and meatpacking stretches back generations, including his father\u2019s work at Meridian Meat Packers in Idaho. That lineage has helped shape Arrowhead Grill\u2019s reputation as one of Arizona\u2019s most respected destinations for steak.<\/p>\n\n\n\n
