They are deep-fried in a cornmeal breading and served with a green chili demi-glace.<\/p>\n\n\n\n<p>This is definitely one of my holiday favorites. Stir with fork.<\/li>\n\n\n\n<li>In a separate container add buttermilk and the remaining seasoning. Stir. <\/li>\n\n\n\n<li>I also like seasoning my lamb before placing into the buttermilk wash. From the wash to the breading, roll the lamb around to coat well. Then carefully place into the fryer heated to 350\u00b0F.<\/li>\n\n\n\n<li>These take between 3\u20135 minutes for medium well. Don\u2019t overcrowd the fryer, but continue this process accordingly. <\/li>\n\n\n\n<li>Placing cooked lamb on a rack to rest until served.<\/li>\n\n\n\n<li>As for the demi-glace that\u2019s really simple, too.&nbsp;Heat red wine, green chilis and water to a soft boil. Add Demi base and whisk. Reduce heat and simmer for 3\u20135 minutes or until it starts to thicken.<\/li>\n\n\n\n<li>Pro tip: Place lamb in buttermilk 20 minutes before breading.
