And there\u2019s <em>roasted cauliflower. <\/em>Kick up your cauli repertoire with this signature recipe from <a href=\"https:\/\/www.arizonafoothillsmagazine.com\/taste\/phoenix-food-and-restaurant-news\/chef-chat-alex-pasco-of-enchantment-resort\">Chef Alex Pasco<\/a> of Che Ah Chi at Enchantment Resort.<\/p>\n\n\n<p>Cauliflower Liquid<br \/>1-2 Heads Cauliflower<br \/>30 oz. White Wine<br \/>1 C Extra Virgin Olive Oil<br \/>1\/2 C Salt<br \/>1\/2 C Lemon Juice<br \/>2 T. Crushed Pepper Flakes<br \/>2 T Sugar<br \/>2 Bay Leaves<br \/>1 G Water<\/p>\n<p><em>Bring all ingredients, except the cauliflower, to a boil in a large pot. <\/em><em>Blanch whole cauliflower heads with the leaves and excess stem removed. <\/em><em>Cauliflower should be cooked until just tender or about 10 minutes. <\/em><em>The liquid can be saved and reused.<\/em><\/p>\n\n\n<p>Kale Pesto<br \/>1 lb. Baby Kale<br \/>1 \u00bd C Pumpkin Seeds, toasted and salted<br \/>\u00bd C Extra Virgin Olive Oil<br \/>3 Cloves Garlic<br \/>\u00bd C Grana Padano<br \/>1 C Ice Water<br \/>Salt to taste<\/p>\n<p><em>Place the extra virgin olive oil, kale, pumpkin seeds, garlic and cheese in a blender and puree adding ice water as needed. Once smooth and spreadable (not too thick), season to taste with salt.<\/em><\/p>\n<p>Aji Amarillo Vin<br \/>2 Lemons, juice and zest<br \/>1\/4 C Rice Wine Vinegar<br \/>1 T Agave Nectar<br \/>1 oz. Aji Amarillo<br \/>2 Heaping Tbsp. Dijon Mustard<br \/>1 \u00bd C Canola Oil<br \/>Salt to taste<\/p>\n<p><em>Puree all ingredients, except the oil, in a blender until smooth. While still pureeing, slowly add the oil until fully emulsified, adding water if necessary. Season to taste with salt.<\/em><\/p>\n\n\n<p>To Serve:<\/p>\n\n\n<p><em>Rub a head of cauliflower with oil, season with salt and cut two cross marks about halfway to the core of the cauliflower. <\/em><em>Bake in a 450-degree oven for about 12 minutes. <\/em><em>Using a spoon, spread 3 oz. of kale pesto across the bottom of the plate in a circle. <\/em><em>Place the cauliflower on top of the pesto. <\/em><em>Drizzle 2 oz. of the vinaigrette over the top of the cauliflower. <\/em><em>Grate 1 oz. of grana padano over the top of the cauliflower.<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"There is roasted cauliflower.
