The good news is, you don\u2019t have to sacrifice your diet to fulfill your fun fall cravings. Pumpkin boasts lots of health benefits, making it a great option to include in your diet. In fact, the pumpkin contains 19 vitamins and minerals, antioxidants and filling fiber. When carving up your jack-o-lantern this Halloween, don\u2019t toss the scraps in the garbage just yet! Judy Nicassio, lead nutritionist at <a href=\"http:\/\/www.werejuvenate.com\">Rejuvena Health &amp; Aesthetics<\/a>\u00a0shares lots of fun and ways to prepare pumpkin treats for your family and friends.<br \/>\n<strong>Pumpkin Puree:<\/strong><\/p>\n<ul>\n<li>1 medium pumpkin<\/li>\n<li>Olive Oil<\/li>\n<\/ul>\n<p><em>-Cut the pumpkin in half, remove the seeds, brush with a tiny bit of oil and place the two halves face down on a tray.<\/em><br \/>\n<em>-Roast at 400 F until soft.<\/em><br \/>\n<em>-Scrape out the flesh with a spoon and run it through a food processor or blender to make a puree.<\/em><br \/>\n<em>-You can then freeze it in sealed containers and keep it for months!<\/em><br \/>\n<strong>Pumpkin, Chocolate Chip and Oatmeal Cookies:<\/strong><br \/>\nWet Ingredients:<\/p>\n<ul>\n<li>\u00bd cup of 100 percent pumpkin puree<\/li>\n<li>2 tbsp melted coconut oil<\/li>\n<li>3 tbsp unsalted natural peanut butter<\/li>\n<li>3 tbsp coconut sugar<\/li>\n<li>3 tbsp pure maple syrup<\/li>\n<li>1 egg<\/li>\n<li>\u00bd tsp vanilla extract<\/li>\n<\/ul>\n<p>Dry Ingredients:<\/p>\n<ul>\n<li>1 \u00bc cups gluten free rolled oats<\/li>\n<li>\u00bd cup + 2 tbsp gluten free oat flour<\/li>\n<li>\u00bd Tsp baking soda<\/li>\n<li>\u00bc Tsp baking soda<\/li>\n<li>\u00be Tsp ground cinnamon<\/li>\n<li>\u00bc tsp ground cloves<\/li>\n<li>\u00bc tsp ground nutmeg<\/li>\n<li>1\/8 tsp salt<\/li>\n<\/ul>\n<p>Additional Ingredients (for topping)<\/p>\n<ul>\n<li>\u00bc cup vegan chocolate chips<\/li>\n<li>2 tbsp pumpkin seeds<\/li>\n<li>2 tbsp pecans, chopped<\/li>\n<li>2 tbsp dried cranberries, chopped<\/li>\n<\/ul>\n<p><em>&#8211; Preheat the oven to 350\u00b0F.<\/em><br \/>\n<em>&#8211; Add wet ingredients to a large bowl and whisk until well incorporated.<\/em><br \/>\n<em>&#8211; Add the dry ingredients and whisk together until thoroughly combined. Fold in additional ingredients (chocolate chips, pumpkin seeds, pecans, and dried cranberries).<\/em><br \/>\n<em>-Evenly space apart cookie dough. Press toppings into the top of each cookie. Use a fork to flatten cookies, they will not spread during baking.<\/em><br \/>\n<em>-Bake for 10-14 minutes.\u00a0 Allow to cool on a cooling rack for about 30 minutes, or until completely cool.<\/em><br \/>\n<strong>Creamy Pumpkin Pie (No Baking!) <\/strong><br \/>\nFor the crust:<\/p>\n<ul>\n<li>3 cups of toasted nuts (you choice)<\/li>\n<li>3 tablespoons coconut oil<\/li>\n<li>2 tablespoons maple syrup<\/li>\n<li>1 teaspoon ground cinnamon<\/li>\n<\/ul>\n<p>Pumpkin Filling:<\/p>\n<ul>\n<li>1 cup pumpkin puree<\/li>\n<li>3 \u00bd Tbsp cornstarch<\/li>\n<li>1\/3 cup sugar<\/li>\n<li>\u00bd tsp pumpkin pie spice<\/li>\n<li>Pinch sea salt<\/li>\n<li>1 2\/3 cup unsweetened milk (you can also use almond or coconut milk)<\/li>\n<li>\u00bd tsp vanilla extract<\/li>\n<\/ul>\n<p>Coconut Whipped Cream:<\/p>\n<ul>\n<li>One 13.5 ounce can of full-fat coconut milk, chilled overnight<\/li>\n<li>2-5 Tbsp powdered sugar<\/li>\n<li>\u00bd Tsp pure vanilla extract<\/li>\n<\/ul>\n<p><em>-To make the filling, place all dry ingredients in a saucepan and whisk to combine. Then add pumpkin puree and whisk again.
