\nAs the idea of fall is starting to take hold (you\u2019ve seen the plastic pumpkins on store shelves, right?), we\u2019re ready to whip up with decadent mac and cheese recipe from Meiomi wines<\/a>. Pair it with the brand\u2019s buttery chardonnay.
\nBacon & Roasted Cauliflower Mac n\u2019 Cheese<\/strong>
\nMise en place<\/u>
\n1 head, cauliflower
\n\u00bd cup, chopped pancetta
\n1 T, olive oil
\nMornay Sauce<\/u>
\n3 T, unsalted butter
\n3 T, all-purpose flour
\n2 cup, whole milk
\n1 cup, Nicasio Square Cheese
\nKosher salt
\nFreshly ground black pepper
\nFreshly grated nutmeg, to taste
\nPasta and Garnish<\/u>
\n1 cup, cheddar
\n500g, \u201celbow\u201d pasta
\n\u00bd cup bread crumbs
\nBacon, Cauliflower and Cheese Prep<\/u><\/em><\/p>\n

    \n
  1. Chop cauliflower into florets. Toss with olive oil, salt and pepper and spread out on baking sheet. Roast at 350 degrees F. for ~30 minutes, until browned.<\/em><\/li>\n
  2. Remove from oven and allow to cool on a cooling rack. Set aside.<\/em><\/li>\n
  3. Chop Nicasio Square (for Mornay sauce) and cheddar (for top of mac n\u2019 cheese). Set aside.<\/em><\/li>\n
  4. Fry chopped pancetta until lightly browned and set aside.<\/em><\/li>\n<\/ol>\n

    Pasta Prep<\/u><\/em><\/p>\n

      \n
    1. Boil pasta until al dente. Pull pasta from heat and drain. Toss with olive oil to prevent sticking. Set aside.<\/em><\/li>\n<\/ol>\n

      Mornay sauce<\/u><\/em><\/p>\n

        \n
      1. Warm milk in medium-sized pot, stirring occasionally<\/em><\/li>\n
      2. Place butter in a separate pot and melt. Whisk in flour until homogenous. Reduce heat to medium-low. Whisk in milk, little by little, until smooth and creamy.<\/em><\/li>\n
      3. Whisk in grated nutmeg, salt and ground black pepper.<\/em><\/li>\n
      4. Add chopped Nicasio Square cheese and whisk until completely incorporated. Set aside.<\/em><\/li>\n<\/ol>\n

        Mac & Cheese<\/u><\/em><\/p>\n

          \n
        1. Add chopped cauliflower and pancetta to pasta. Cover in Mornay sauce. Top with grated cheddar and bread crumbs.<\/em><\/li>\n<\/ol>\n
