Salad<\/strong><\/p>\n<ul>\n<li>1\/2 Asian pear <em>ripe<\/em><\/li>\n<li>1 teaspoon white truffle honey<\/li>\n<\/ul>\n<p><strong>Bacon Wrapped Sea Scallops<\/strong><\/p>\n<ul>\n<li>4 small sea scallops <em>abductor muscle removed<\/em><\/li>\n<li>2 slice high quality bacon<\/li>\n<li>1 tablespoon chicken liver mousse<\/li>\n<li>coarse sea salt for garnish<\/li>\n<li>chopped chives <em>for garnish<\/em><\/li>\n<li>salt <em>to taste<\/em><\/li>\n<li>pepper <em>to taste<\/em><\/li>\n<li>olive oil <em>for cooking<\/em><\/li>\n<li>olive oil <em>for finishing<\/em><\/li>\n<\/ul>\n<p><em><strong>Asian Pear Salad<\/strong><\/em><\/p>\n<ol>\n<li><em>Shave the Asian pear paper thin.<\/em><\/li>\n<li><em>Drizzle with white truffle honey.<\/em><\/li>\n<\/ol>\n<p><em><strong>Bacon Wrapped Sea Scallops<\/strong><\/em><\/p>\n<ol>\n<li><em>Wrap scallops with bacon, it should take a \u00bd piece of bacon per scallop.<\/em><\/li>\n<li><em>Season scallops with salt and pepper.<\/em><\/li>\n<li><em>Heat a skillet or griddle over high heat.<\/em><\/li>\n<li><em>When pan is very hot, drizzle seasoned scallops
