Seasonal sea bass<br \/>\nMole seasoning, as needed (see recipe below)<br \/>\n3 T Goat cheese<br \/>\nShredded cabbage, as needed<br \/>\nMini flour tortillas, as needed<br \/>\nGuacamole<br \/>\nRoasted corn, as needed<br \/>\nRefried beans, as needed<br \/>\nQueso fresco, as needed<br \/>\nMole Powder:<br \/>\n1 C Chocolate nibs<br \/>\n\u00bc C Cumin seeds<br \/>\n\u00bd tsp. Garlic powder<br \/>\n1T Oregano leaves, dried<br \/>\n1 T Red chili peppers, dried<br \/>\n4 Dried pasilla peppers<br \/>\nA few coriander seeds<br \/>\n\u00bc T Salt<br \/>\n<em>Roast the chocolate nibs at 400 degrees for about 30 minutes or until they get dark in color. Let them cool for about an hour.
