I should know: I just pulled it off. You see, every year my girlfriends and I get together for our annual White Elephant Xmas party. Given the attendees\u201416 competitive volleyball players, all type A personalities \u2014no one is shy about swiping gifts. But I\u2019m getting off topic. I\u2019m here to talk about the food. I have hoards. I wanted comfort food-style eats I could prep in advance. I also wanted to highlight fresh, seasonal ingredients. Everyone lapped up the soups and casserole\u2014<i>and<\/i> had guilt-free seconds. Granted, the caramel popcorn was the undisputed hit of the night, but there were plenty of sighs of delight for the healthy main courses too. That\u2019s why I put it among the main courses. This recipe is for 2 generous main course portions, but if you eat it as a starter it will serve 4 (in which case add a little more broth).<\/p>\n<p>INGREDIENTS<br \/>\n2 tbsp olive oil<br \/>\n1 onion, minced<br \/>\n1 cup (200 g) yellow split peas<br \/>\n\u00bd celeriac, cleaned and cubed<br \/>\n2 tsp cumin<br \/>\n2 tsp coriander<br \/>\nPinch of cayenne<br \/>\n1 small clove garlic, minced<br \/>\nSalt and freshly ground black pepper<br \/>\n4 \u00bd cups (1 l) vegetable broth<br \/>\nZest and juice of 1 lemon<br \/>\nA few sprigs fresh cilantro<br \/>\n2 to 3 tbsp crumbled feta cheese<\/p>\n<p>INSTRUCTIONS<br \/>\n1. Heat the oil in a medium saucepan over medium-high heat. Add the onion and saute for 5 minutes, until translucent. Add the lentils and celeriac. Stir-fry them briefly, then add the spices and garlic. Season with salt and pepper.<br \/>\n2. Stir in the broth and lower the heat. Let the soup simmer for about 20 minutes, or until lentils are nicely al dente.<br \/>\n3. Just before serving, add the lemon zest and juice to the soup. Chop the cilantro and add it to the soup.<br \/>\n4. Ladle the soup into big bowls and crumble some feta on top.<br \/>\n5.
