You know, the judge from ABC\u2019s <i>The Taste <\/i>and the guy behind <a href=\"http:\/\/www.searsucker.com\/scottsdale\/\">Searsucker<\/a>. And I have a crush on his cookbook, <i>Come Early, Stay Late<\/i>. While it\u2019s not a health cookbook, per say, it\u2019s full of healthy recipes from his famed restaurants (think Charred Jalapeno Tuna Ceviche, Prosciutto Mozzarella Salad and Strawberry Summer Salad and Brussels Sprouts + Candied Walnuts to name a few).\u00a0 But best of all it\u2019s flavored with Malarkey\u2019s potent personality \u2013 it zings off every description and ever dish.<\/p>\n<p>And the Top Chef was kind enough to share one of his recipes with us: Spicy Tomato + Cucumber Salad. It\u2019s the quintessential summer salad with one twist \u2013 it\u2019s hot to trot! (And yes, I second his motion to get the ripest tomatoes you can find \u2013 it makes a huge difference.) Salad never looked\u2026 I mean tasted so good. The color of cucumber skin, as well as the texture, is super appealing, especially for a cool, fresh salad like this one \u2014 so make peel\u00a0strips! Half peeled and half not. This simple salad\u00a0is meant to be \u201cunapologetically\u201d HOT! So if you aren\u2019t saying sorry after\u00a0the first bite, add more HEAT!!!<\/p>\n<p><strong>[for the salad]<\/strong><br \/>\n1 cucumber, half peeled, sliced down the middle, cut in half moons<br \/>\n3 Roma or Capri tomatoes, cut into similar size as cucumber<br \/>\n1 handful arugula (or other spicy greens, such as mizuna or mustard)<\/p>\n[for the vinaigrette]\n1 tablespoon Sambal or Sriracha chile paste<br \/>\n2 tablespoons soy sauce<br \/>\n1 lime, zested and juiced<br \/>\n3 tablespoons extra virgin olive oil<br \/>\nKosher salt and freshly ground black pepper,<br \/>\nto taste<\/p>\n<p><strong>[how to do it]<\/strong><br \/>\n1. Assemble the salad:\u00a0In a large bowl, combine all the salad ingredients.<br \/>\n2. Make the vinaigrette:\u00a0In a medium bowl, whisk together the chile paste, soy sauce, and lime juice and zest. Add the olive oil in a slow steady stream while whisking. Taste and season with salt and pepper.<br \/>\n3. To serve:\u00a0You can add the tomatoes and cucumbers to the vinaigrette 10 to 20 minutes before serving as a little pre-marinade!
