Staying ahead of the culinary curve, The Ritz-Carlton, Dove Mountain is making some mouth-watering changes to its already delectable menu.


Probably my favorite aspect of the entire Ritz-Carlton compound in Marana is the sense that the operation as a whole keeps thing fresh. From golfing to spa-ing to dining, the management at the Ritz has a keen idea of how to please the people. And their execution is spot on every time.

Case in point: the acclaimed chefs of The Ritz-Carlton, Dove Mountain recently raised the bar on the “True American” cuisine that they serve by adding several new signature items to Core Kitchen & Wine Bar’s menu of desert-inspired American favorites.

With the Accenture Match Play coming up next week, it might be hard to get a table to appreciate the flavors coming out of Core Kitchen and Wine Bar located within the Rit-Carlton property. But leading up to and following the event, Core is a must try for locals and visitors alike.

The brightly-flavorful new selections blend savory, salty and sweet and include such main-course favorites as: 1) Bacon-Wrapped Kurobuta Pork Tenderloin, Cider-Braised Brussels Sprouts, Sweet Potato Pure and Spiced Apple Compote. 2) Pan-Seared Maryland Rockfish with Chanterelle Ragout, Butternut Squash, Spinach and Grainy Mustard Sauce and 3) Dr Pepper-Braised Short Ribs, Hand-Made Sage Pappardelle, Porcini Broth.

The contemporary, multi-venue CORE Kitchen & Wine Bar is the culinary anchor for The Ritz-Carlton, Dove Mountain and features several unique settings offering an array of dining experiences where local and regional ingredients, some of them rare or custom-grown, create a colorful new desert dining experience.

With seating for 235 guests, CORE Kitchen &d Wine Bar features a lively open kitchen, indoor/outdoor dining, and settings that include an interactive chef’s table, wine room and cellar, chef’s counter, private dining room, and patio lounge close to CORE’s own thriving citrus grove. The restaurant also adjoins the resort’s Ignite Lounge and Bar, which offers 100-plus labels of smoky single malt Scotches and whiskeys from around the world.

CORE Kitchen & Wine Bar is open daily for breakfast and dinner and offers a collection of more than 2,800 bottles of wine.
