Chicago Restaurant Opens in Phoenix


A Chicago-based restaurant is slated to make its debut at the new Westin Phoenix Downtown Hotel in March. Province is set to be a seasonal American restaurant with Spanish and South American influences. The restaurant, which first opened in Chicago in 2008, is set to make its Valley debut on March 10. The Downtown Phoenix location will be the second national outpost of Province.
Province diners can expect a selection of seasonal, local and farm-to-table cuisine. To achieve this, the ingredients used to craft the dishes and cocktails will be sourced from a variety of local, organic, natural and sustainable sources. Executive Chef Randy Zweiban prides his restaurant’s fare on being approachable, simple and comforting. Sample menu items include:
Breakfast Pizza with goat cheese, chorizo sausage, caramelized onions and scrambled eggs
Mini Cuban Pork Sandwich Bites
Honey Crisp Apple Salad with candied olives, almonds and apple cider vinaigrette
Market Squash and Goat Cheese Sandwich with arugula, avocado and a market vegetable salad
Farm-Raised Shrimp and Anson Mills Organic Grits with manchego cheese
Slow-Cooked Organic Salmon edamame, spinach and market onions plus chile miso
Marinated and Grilled Skirt Steak with sweet potato gratin and chimichurri
Peanut Butter and Chocolate Flan “Sandwich”

When it comes to washing down such delish dishes, the Phoenix restaurant will host a floor-to-ceiling, temperature-controlled wine wall that will hold organic, biodynamic and sustainable wines from around the world as well as show off some local love with a selection of local Arizona wines. Hand-crafted cocktails, featuring fresh-squeezed juices and many boutique spirits, will also be available. A perk at Province is that the Downtown Phoenix restaurant will offer complimentary sparkling and still water for dining guests.
The Phoenix-area Province is taking a cue from its Chicago counterpart by offering Mother Earth-approved design elements, including sustainable cork countertops. (The Chicago location achieved Gold Level LEED certification for its eco-friendly construction and operations.) The modern space will also have vibrant pink accents, floor-to-ceiling windows, a living moss wall and an intimate bar/lounge. The patio will be a must-see spot, as it will be secluded from the bustle of the street and spotlight a dramatic two-story waterfall and lush landscaping. An outdoor fireplace is surrounded by dining tables and club chairs will be the centerpiece of the outdoor dining space.
